History

We want to preserve, so we attack.

We were founded in 1337 in Hatcho-cho (formerly Hatcho Village), located 8-cho (about 870 meters) west of Okazaki Castle.

Since then, we have continued to follow the traditional method of piling conical stones in cedar vats and sleeping in them for two summers and two winters. However, in order to preserve tradition, it is necessary to go on the attack.

We had been exporting overseas before I joined the company, and now we are selling our products in 20 countries around the world.

Our target is basically local people. We are working hard to make people who are not familiar with miso recognize Hatcho miso and Japanese traditions.

For example, I work as a sales representative at overseas food fairs and go to the U.S. every February with a pot of miso soup to propose Hatcho miso to restaurants in New York.

But, Hatcho miso can only be made in our own miso brewery and cedar vats.

We will continue to produce Hatcho miso without losing our commitment to prioritizing continuity over business expansion.

Characteristic

Hatcho miso is a special kind of soybean miso.

As some of you may know, "Hatcho Miso" is not a generic name for soybean miso, but a trademark that has been used continuously by two companies in Hatcho-cho since the Edo period.

The only ingredients are koji soybeans, salt, and water, and the koji is also made from only soybeans and salt.

Incidentally, Aka-Dashi Miso is a combination of soybean miso and rice miso, so it is not Hatcho Miso.

Hatcho miso is one of our specialties, but we also produce a product with another special feature: organic.

Since the 1980s, we have been making Hatcho miso using organic soybeans.

We also have other products that are easy to arrange and use, such as powdered Hatcho miso and miso sauce that can be used just by pouring it on.

Our Hatcho miso is environmentally friendly and people (health) friendly.

In some regions, soybean miso and red miso are rarely used, and many people do not know how to use them in the first place.
