History

A theme park of handmade miso.

Hato-ya has a long history, founded in 1861.

Keeping in mind that "miso is not made by humans, but by koji microbes," we continue to produce miso in the traditional way.

In the past, the home was the main source of food, and each family prepared its own miso.

However, now that instant food is abundant, I feel that the taste of homemade food has faded away.

What can we do as brewers? Is it enough to just provide products? Can't we expand our possibilities? With this in mind, we opened "Miso Park", a theme park for miso and soy sauce.

We will continue to expand the possibilities of miso and soy sauce by actively proposing new ways to enjoy our products, as well as new ways to cook, snack, and eat them.

Characteristic

The effective soybean miso, nurtured by history.

We have decided that we will brew what can never be done at home, and offer our history and traditional commitment in the form of products.

The best part is the 6-foot-long vats made of cedar that have been used for a hundred years, and the soybean miso made in a hundred-year-old warehouse lined with these vats.

Soybean miso that has been matured for more than three years is made from the finest ingredients and koji, as well as from the microbes that have lived in the vat and warehouse for many years, resulting in a miso with a stronger flavor and a deeper taste.

Our miso has many health benefits, such as reducing high blood pressure and lowering cholesterol.

Among them, the brown pigment is said to be effective in inhibiting the formation of lipid peroxides and preventing aging.

3 years matured miso is the effective type of soybean miso, with a darker brown color from long-term aging.

Eat delicious miso and maintain good health at the same time.
