History

I want to brew something better. If it's good, I can keep going.

The founder, Yaemon Aoki, was a farmer who started miso,soy sauce brewing in the Meiji era.

He improved his business performance and was succeeded by the second and third generations.

The company was hit by economic turmoil many times, including the financial depression and wars.

However, he said, "If I can make better products, the store will be able to continue.

He made more effort and produced high quality soybean miso and tamari soy sauce.

From the fourth generation, he added academic control of raw materials and manufacturing processes, and steady progress was made.

Today, the fifth and sixth generations, father and son, continue to preserve the traditional taste.

Characteristic

Miso and tamari soy sauce with a concentrated flavor.

Tamari soy sauce is the liquid that is produced during the manufacturing process of soybean miso, which is mainly made in Aichi Prefecture.

Most miso and soy sauce are made from soybeans and wheat, but our products are made without wheat.

It is made with high quality Aichi soybeans and traditional sea salt from Izu Oshima.

It is a product that takes three years to mature slowly in a wooden cedar vat that we have used for over 100 years.

It is additive-free because of its deep flavor and richness.

The brewing process is done once a year during the cold season from late February to April.

The taste of the product made after three years is determined by the koji making process.

The soy sauce called "warabeuta" and "tsuresoi" is rich in flavor because less water is added to the ingredients.

A product called Najimi also has 1.

5 times more umami than ordinary products.

All of these products are low in salt, and since they are not heat-treated, the enzymes are still alive, making them a healthy food.
