History

The influence that remains strong in today's Chikuwa.

We, Yamasa Chikuwa, were founded in 1827.

Since then, we have been manufacturing and selling chikuwa(tube‐shaped fish paste cake) and other products mainly in the Toyohashi area.

Our chikuwa originated when the ancestors of Yamasa Chikuwa, who ran a fish wholesaler, made a substitute visit to Konpira-sama in Shikoku.

Chikuwa, a specialty of the city, was new to Toyohashi at the time and tasted great.

As a fish wholesaler, there was no shortage of fish in the Toyohashi area, so he decided to start production.

The result was a great success. The popularity of this product is still evident in today's chikuwa.

Chikuwa, which is white at both ends, also originated from us. As distribution expanded in the Meiji era (1868-1912), customers asked for a way to distinguish Toyohashi's chikuwa, and that's when we started.

However, the major manufacturers followed suit, and nowadays, chikuwa has white ends.

Characteristic

Real taste can only come from real.

Since our founding, we have been making chikuwa with the spirit of "lead does not change to gold.

Lead is still lead, even if it is gold plated. It's the same with chikuwa.

We believe that authentic chikuwa is created by carefully selecting the ingredients, kneading, baking, adjusting the flavor to suit the climate, and the skills of the craftsmanship.

However, in order to provide the best taste, we have to limit the sales area.

If possible, We would like to share the authentic taste with people all over Japan and provide them with joy and satisfaction through food.

To this end, we are working to develop new products that are not bound by region or lifestyle.

Fish soy sauce made with our special "eso fish," the main ingredient of chikuwa; chikuwa in chili oil, which was created from the menu of a restaurant we opened in order to serve delicious boiled fish-paste products; and Japanese basil in olive oil, which makes chikuwa and kamaboko even more delicious.

All of these products are made with the same thoughtfulness as chikuwa.

We think the good thing about chikuwa and other fish cake products is that it has a regional flavor, with different fish being caught in different areas and different tastes.
