"Hatcho Miso" is not a generic name for soybean miso, but a trademark that has been used continuously by two companies in Hatcho-cho since the Edo period.
Because they call themselves "Hatcho Miso," the only ingredients are koji soybeans, salt, and water, and the koji is also made from only soybeans and salt.
